Apple pie, tagines, and churros just wouldn’t be the same without its distinctive flavor. The warm taste of cinnamon frequently highlights desserts and drinks as well as spice blends from around the globe. It has been treasured across cultures since ancient times, and used for culinary, medicinal, and spiritual purposes—including ancient Egyptian embalming methods and sacred Hebrew anointing oils. Some legends even claim that the mythical phoenixes built their nests from cinnamon quills. 

Christine Rai explores cinnamon’s fascinating origins, history, and variety, and shares tips on using the spice in your own kitchen.

Rai is an interdisciplinarian who specializes in food studies, culture, and folklore. She leads local and international trips and tours, talks, and tastings.
