Chocolates by Artisan Confections

Whether we celebrate with it or turn to it for comfort, use it to say “I love you” or “I’m sorry,” enjoy it on the run or at the trendiest of restaurants, chocolate is an indulgent necessity. The classic ingredient continues to inspire some of today’s most inventive treats, and there’s no better way to explore its irresistible decadence than by spending an evening with some of the Washington area’s premier chocolatiers. 

Cookbook author Monica Bhide, who partnered with Co Co. Sala to create a line of Indian-spiced chocolates, moderates a panel featuring Jason Andelman (Artisan Confections), Sarah Dwyer (Chouquette Artisan Chocolates and Confections), Ben Rasmussen (Potomac Chocolates), and Santosh Tiptur (Co Co. Sala).

They begin with the bean, discussing how cacao is cultivated; how where it’s grown influences flavor; single-origin versus blended chocolates; the effects of climate change on production; organic versus conventionally grown cacao; and how they select the beans that go into their creations. 

They also offer practical tips on cooking with chocolate, covering how to choose the best types for baking, tempering chocolate, and understanding what cacao percentages mean, as well as how to pair chocolates with wine.

Of course, this mouthwatering discussion concludes on a sweet note with a chocolate tasting. Enjoy a selection of each chocolatier’s signature specialties, accompanied by tasting notes.
